Mushroom Pate

1 medium onion
3 cloves of garlic
1 stick of celery
300g of mushrooms
3 tbsp fresh parsley
1 tbsp oil
1 tbsp thyme leaves
1/4 tsp nutmeg
salt
pepper
Peel and chop the onion and garlic. Chop the celery, parsley and mushrooms.

Fry the onion and celery in oil for about 5 minutes until cooked. Add the mushrooms, garlic, thyme and half the parsley.Continue to cook for a further 15minutes until the mushrooms stop producing liquid.

Place the mushroom mix in the blender add some soy sauce and nutmeg, blend until smooth.

Stir in the the rest of the parsley and add salt and pepper to taste.

absolutely delicious on toast!
