Stropharia rugosoannulata – Wine caps are known for their burgundy cap and rapid growth, they are amongst the largest edibles. Unlike other members of the stropharia genus the wine cap is known as a choice edible.

Pluerotus Ostreatus – Oysters mushrooms are shell shaped mushrooms that grow in clusters. The blue or grey oysters are native to British forests. Unlike many fungi they are not seasonal, they can be found all year round. Oysters are a sought after edible because of their delicious meaty texture.

Lions Mane

Hericium erinaceus – The lions mane is a very interesting mushroom, said by scientist to improve nerve development and function. It is a protected species so cannot be harvested in the wild in the UK. Identified by its tendency to grow in a single clump of long dangling spines. An absolutely delicious choice edible.
